I can hardly take credit for this salad combination. Strawberry Balsamic combination is as classic of a flavour combination as it gets. But we are not just adding balsamic here – we are adding the best most amazing thick and flavourful balsamic dressing, while topping the salad with candied pecans for an amazing piece de resistance garnish!
The rest of the salad is perfected also. The onions are soaked in cold water while we are preparing the rest of the salad to retain their crunch but take some of their pungency away. I’m using Romaine lettuce here but spinach will work as well. Goat cheese provides a creamy element and another flavour dimension. I also top it with candied bacon which is obviously amazing but not necessary.
Seriously, this salad is impressive. Put it together for an enjoyable dinner or for a special occasion. Top it with some protein for a complete meal, if desired.





Place sliced onions into a bowl and cover with cold water. This will take some of their pungency away. Allow this to sit at room temperature while you prepare the rest of your salad.
For the dressing, combine all of the ingredients except oil and whisk. Slowly drizzle in the oil while whisking to emulsify into thick dressing. You will need most of the dressing for the salad, but you may have some leftover.
Wash, dry and chop your lettuce. Layer the rest of the veggies on top. Drain the onions from the water; discard the water. Dry the onions with the paper towel before adding to the salad. Dress the salad with some of the dressing. You want each element to be dressed well but not drown in the dressing and get soggy. It's always easier to add more dressing as needed, so don't add it all at once. Toss the salad to combine. Top with Goat cheese, nuts and anything else you wish to add to your salad. Serve right away and enjoy.
