Creamy Bright and Fresh Avocado Sandwich – yet another way to cook with Avocados!

This sandwich is extremely delicious. Lots of bright and fresh flavours and lots of different textures. And the best thing – it takes minutes to make!

The inspiration came from Toronto-based Aroma Espresso Bar!

 4 slices good bread, such as sourdough
 1 avocado
 ¼ yellow onion, minced
 ½ lime, juice of
 1 tbsp water, plus more as needed
 kosher salt to taste
 freshly ground black pepper to taste
 3 soft-poached eggs, quartered or sliced
 2 tomatoes, sliced
 basil leaves
 jalapeno slices
 any other additions of choice!

If your bread is extremely fresh (like mine was) leave it untoasted. If it's not as fresh, toast it lightly.

Mash avocado well with a pinch of kosher salt. Fold in the minced onions. Add juice of 1/2 lime and 1 TBSP water and mix to make it creamy and spreadable, adding more water as needed. Taste your avocado "sauce" and adjust the seasoning to taste with more lime juice, salt or pepper. Spread on 2 of the bread slices. Top with soft poached eggs, tomatoes, jalapenos, basil and whatever else you like. Top with the remaining bread pieces to make sandwiches. Slice in half and serve immediately.

Make it Gluten-Free: Use good quality Gluten-Free bread instead of regular bread.
