Grilled Chicken Tenders - take minutes to prep and are mighty delicious!

You can give these a quick 20 minute marinade, or throw them into your marinade in the morning. Then as you get home from work – you need 5 minutes to preheat the grill and less than 5 minutes of cooking time! Delicious weeknight meals don’t get any easier than this!

You can absolutely use the regular chicken breasts instead – just slice each breast horizontally into 3-4 wedges.

Two things make this dish a huge success. One, the marinade works to enhance the flavour and the juices of the chicken. Two, cooking the chicken most of the way on one side, results in great grill marks, juicer meat and way less of a chance of overcooking the chicken.

Not only do these make an excellent dinner or lunch, you can serve them as an appetizer as well!

Yields4 Servings

For the chicken:
 1 lb chicken tenders (chicken breasts sliced into strips will work)
 3 tbsp olive oil
 ¼ cup lemon juice (lime juice would also work great)
 2 tbsp water
 2 cloves of garlic, shredded or crushed
 1 tsp brown sugar
 2 tbsp soy sauce
 1 tsp hot sauce or pinch of cayenne, optional, for heat
 freshly ground black pepper, to taste
To serve:
 parsley or cilantro for garnish, optional
 bamboo skewers
 peanut sauce, optional, recipe follows

Soak bamboo skewers in water for at least 30 minutes and ideally overnight. This will prevent them from burning on the grill.

Combine all of the ingredients for the chicken together in a large resealable bag. Squeeze out as much air as possible from the bag as this will allow the marinate to work better. Even 20-30 minutes will allow this marinade to work. However, this chicken is at it's best after it marinates for 6-12 hours. So, ideally, throw the chicken into marinade in the morning and make it later in the day for dinner.

Preheat the grill to high for at least 5 minutes. Oil and clean the griddle.

Place the chicken skewers with the more attractive side on your preheated grill. Close the grill. Grill for 2-4 minutes. Flip over and finish cooking on the other side, likely for just around a minute. The chicken must reach the safe internal temperature of 165.

The goal is to cook the skewers 60-90% of the way on just one side, then flip over and finish cooking on the other side. In other words, try to cook the chicken more than half way on one side before your flip the skewers over. This will result in more gentle cooking, better grill marks and less of the chance of overcooking. But watch closely not to burn.

Remove form heat and serve with your favourite sides and garnishes. Optional peanut sauce recipe follows below.

 juice of 1 lime
 2 tbsp soy sauce
 1 tbsp honey or maple syrup
 1 garlic cloves, grated (you can increase this to 2 garlic cloves)
 1 tsp grated ginger, optional
 1 tbsp olive oil
 1 tsp sesame oil (omit if you don't have any)
 1 tsp rice vinegar (omit if you don't have any)
 freshly ground black pepper
 dash of Asican chili sauce, optional (for extra heat), such as Sriracha or Sambal Oelek
 1 tbsp water, and more as needed

Combine all of the ingredients together in a bowl and whisk well to combine. Taste and adjust the taste according to personal preference with more of any of the ingredients (lime juice for freshness and acidity, soy sauce, hot sauce, honey, etc.) Add water one tablespoon at a time until creamy, spreadable consistency is reached.

Serve right away or refrigerate. If refrigerated, allow this to come to room temperature before serving.

Make it Gluten-Free: Use Gluten-Free soy sauce. As with all Gluten-Free recipes, ensure all your ingredients are Gluten-Free and not cross-contaminated.
