Guilt-free good for you ice cream. Or technically healthy and thick smoothie with ice cream-like consistency

I absolutely adore this “healthy ice cream.” If you are like me, then on a hot summer day you might just be craving cold and refreshing ice cream-like treats. Except, the ones that don’t weight you down during the season you want to look your best!

This is where this thick ice-cream like smoothie comes in. The only problem I see with this recipe, is that a good high powered blender is a must to get the proper consistency. If you don’t have one, you may need to add some more milk, resulting in less thick consistency but it will still taste delicious.

To enhance the consistency, creaminess and make it more of a complete meal, I also add cooled cooked oatmeal to this smoothie, which is a great trick for a more luscious and velvety texture.

One more plus with this smoothie. When I accidentally overbuy bananas and they start becoming overly ripe, I throw them in the freezer. Frozen bananas actually work great in banana bread. This however, is another way, outside of banana bread, to use up those delicious frozen bananas!

High-powered blender is a must with this recipe as a regular blender may not process a smoothie this thick. If you don't have one - no problem, keep adding additional milk 1 tablespoon at a time until your mixture is able to blend properly.

 ½ cup milk of choice, plus more as needed
  cup cold cooked oatmeal, optional
 1 large frozen banana
 2 cups frozen strawberries, sliced
 optional toppings: additional fruit, chia seeds, hemp hearts, etc.

Add oatmeal to the blender and process it. Add the milk and process until the mixture is smooth and creamy. Proceed to the next step.

If you wish to omit oatmeal, simply add milk to the blender and proceed to the next step.

Add your frozen banana and strawberries and blend until smooth. You may need to stop your blender, scrape the sides with a rubber spatula and push down the fruit. If the mixture is not blending properly, add some more milk, tablespoon at a time, only until your blender is able to process the smoothie.

Feel free to top with other things of choice such as more fruit, chia seeds, hemp hearts, etc.

Frozen banana is a must for this extra thick smoothie. Hold your frozen banana under hot running water for a minute or so for the skin to easily peel off.

Happens to be Vegetarian.

Make it Vegan or Dairy-Free: use appropriate milk choice (such as almond milk) or juice.

Make it Gluten-Free: ensure your oats are processed in Gluten-free facility and not cross-contaminated, or omit entirely.
