Again, it’s all about summer cooking. Making meals quick, no-bake no-stove, if possible, while using the freshest, tastiest, brightest ingredients you can pick up at your local farmer’s market (or your garden, if you are lucky!)
And you can’t go wrong with avocadoes, fresh tomatoes, freshly picked basil on top of freshly-baked sourdough bread. Yum! Very delicious, very satisfying and definitely tastes like summer!

So, let’s get cooking, or assembling, shall I say,as this meal requires no cooking!

If your bread is extremely fresh (like mine was) leave it untoasted. If it's not as fresh, toast it lightly.
In a small bowl, mash avocado with a pinch of kosher salt. Spread on top of bread slices. Top with tomato slices, then fresh mozzarella then basil leaves. Add any other optional additions. Season with pepper and drizzle with olive oil. Make sandwiches, slice them and serve!
