Healthy & Quick Peaches and Greek Yogurt

I’m always reluctant to refer to something as healthy or quick as some may associate those words with something unimpressive. But who says that eating healthy is boring? It shouldn’t be!

In fact, I think that key to eating healthy is making your meals as beautiful and exciting (also quick if possible!)

These “Peaches and Cream” are absolutely delicious and made with Greek Yogurt. No added sugar at all (except I brushed the plate with the smallest amount of jam for presentation!) All the sweetness is coming from beautifully caramelized peaches! Great balance of flavours and textures!

So if you have 10-15 minutes in the morning, why not spend it on putting this dish together! Feel free to add any other things of choice to customize this breakfast creation to your liking!

Yields2 Servings

 2 ripe peaches
 1 cup Greek yogurt
 sprinkle of cinnamon
 1 tsp oil or butter for greasing the pan
 Any other garnishes of choice: whipped cream, mint leaves, chocolate shavings, maple syrup, jam, more fruit, granola, etc.

Heat a heavy-bottom skillet (ideally cast iron) over medium heat for at least 3-4 minutes, until very hot. Lightly grease the skillet with oil or butter.

In the meantime, wash, dry and halve your peaches. Remove the pit.

Place the peaches cut side down and cook for about 5 minutes, until caramelized. Lower the heat if needed to avoid burning your peaches. Flip the peaches and continue cooking the other side for 4 minutes or so, until the peach is cooked to your liking (I like mine tender on outside but with some bite in the middle.)

You can serve these warm, at room temperature or even straight from the fridge. Divide the peaches and Greek yogurt between two plates, sprinkle with some cinnamon, top with any additional garnishes of choice and serve!
