Ingredients

  • For the Salad:
  • 2 medium bell peppers (any color, chopped)

  • 3 celery stalks (chopped)

  • 1 English cucumber (seeded and sliced)

  • ½ red onion (sliced)

  • 1pint cherry tomatoes (halved)

  • 1 can chickpeas (drained)

  • 1 tsp dried basil

  • salt

  • pepper

  • 5 oz feta (cubed)

  • For the Dressing
  • 3 tbsp red wine vinegar

  • 1 tbsp Dijon mustard

  • 2 cloves garlic (minced or pressed)

  • 1 tbsp dried oregano

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 1/3 cup olive oil

Directions

  • Make the dressing. Mix the top six dressing ingredients well, and slowly pour the olive oil while whisking and emulsifying the dressing.
  • Combine all your vegetables.
  • Sprinkle with some basil, salt, and pepper.
  • Pour the dressing over the vegetables. This salad can be served immediately or sit in the fridge for a couple of hours so the flavors can meld.
  • Taste and season with more salt and pepper as needed.
