Succotash

Succotash is a dish primarily made out of corn and lima beans. Combination of a grain and a legume provides a dish high in essential in all amino acids, making it a perfect simple dinner.

Ingredients

  • 4-6 slices bacon

  • ½ yellow onion (diced)

  • 2 medium bell peppers (any color, diced)

  • 1 pint cherry tomatoes (cut in half)

  • 2 cups corn kernels (fresh or frozen, but defrosted, are fine)

  • 2 garlic cloves (pressed)

  • 1 tsp dried basil

  • Salt

  • Pepper

  • Basil leaves

Directions

  • Cook the bacon until crisp, and remove to a plate lined with a paper towel. Once cooled, chop the bacon. Drain all but two tablespoons of bacon fat from the pan.
  • Cook onion and peppers in bacon fat until softened.
  • Season with a healthy pinch of salt.
  • Add corn and cook for 4 minutes until softened and heated through.
  • Season with dried basil.
  • Add tomatoes and lima beans and cook for another 3-4 minutes until heated.
  • Add garlic at the end for about 20 seconds and remove your pan from heat after the time is up.
  • Season with more salt and pepper to taste.
  • Top with reserved bacon and basil leaves, and serve.
