  • 2 English cucumbers, halved lengthwise, seeded and sliced into 1/4-inch slices
  • ½ red onion, thinly sliced
  • 120 ml cilantro, chopped
  • 49 g salted roasted peanuts
  • 1 Thai chili or jalapeno, sliced
  • 60 ml fresh lime juice
  • 19 g sugar
  • 25 g fish sauce
  • 7 g honey
  • 27 g vegetable oil
  • 1 garlic clove, pressed
  • 3 ml Sambal Oelek, or more to taste
