Tzatziki

The most important thing to keep in mind when making tzatziki is salting your cucumbers and letting them drain. Without this step, you will be making a tzatziki soup. While your cucumbers are draining in a strainer, combine the rest of the ingredients to let your flavours meld. Then after 30-60 minutes, combine both – yogurt and strained cucumbers, into a delicious Tzatziki sauce! So easy!

No need for highly refined white flour in this breakfast/lunch staple. These are so light and fluffy, yet have that beautiful crisp edge. You or your guests won’t mind that these are healthy, they probably won’t even notice!

Depending on how generous you are with your portioning, this mousse will make 6-8 servings.

This mousse is designed for semi-sweet chocolate; if you wish to use dark chocolate – the amount of sugar will need to be increased.

Steak Marinade

This is a good marinade that I often use for my steaks. Very delicious and flavourful. Let the steak marinate for at least a couple of hours in the fridge but no more than 14 hours.
