Banana Pancakes

I reduced the amount of banana in these pancakes to make them so much fluffier. This is definitely a kid-approved recipe!

Ingredients

  • 1 medium size very ripe banana

  • 2 large eggs

  • 2 tbsp sugar

  • 1 tsp vanilla

  • 3 TBSP melted and cooled unsalted butter

  • 1/2 tsp kosher salt

  • 1 cup plus 2 TBSP milk

  • 1 1/2 cups flour

  • 1 TBSP baking powder

Directions

  • Mash banana in a large bowl. Whisk in milk, sugar, kosher salt, cooled melted butter and vanilla in a large bowl. Add eggs and whisk in gently.
  • Combine flour and baking powder. Sift it into the pancake batter. Whisk or ideally fold everything into homogenous mixture, some lumps are ok. Be sure not to overmix.
  • Using 1/4 cup measure for each pancake, fry over medium heat in butter until cooked through, golden on both sides. Serve with butter, banana slices and maple syrup.
