 sweet potatoes, cubed
 olive oil
 kosher salt, to taste
 pepper, to taste
 healthy pinch of garlic powder, optional, to taste
For optional spice mix for sprinkling:
 1 tsp paprika
 1 tsp garlic powder
 1 tsp chipotle powder
 ½ tsp black pepper
 ¼ tsp cayenne, optional - for extra heat
 ¼ tsp fine table salt

Cube potatoes into even ¾ inch or 1 inch cubes. Gently dry with a paper towel.

Preheat the oven to 400. Line a rimmed baking sheet with aluminum foil.

Mix all of the optional spice mix ingredients together; this recipe makes more than you need and the rest could be stored in an airtight container. This spice is added after the potatoes are baked.

Rub the potatoes with oil, salt, pepper and garlic powder. Using the spices such as garlic powder is optional, but will help with extra crunch. Scatter on prepared baking sheet in one layer without overcrowding the sheet (generally, 2 average sweet potatoes fit on one standard baking sheet.) Bake the potatoes for about 35-45 minutes, flipping the potatoes once after they turn golden on the first side, about 25 minutes of cooking. They should be tender on the inside when tested with a fork; the exterior of your potatoes should be golden brown.

Your baking time will very slightly each time and depend on the moisture level of your sweet potatoes.

Sprinkle with some of the optional spice mix. Start with a very small amount, taste and season more, if desired. This spice mix is quite spicy and is NOT for the faint of heart. Your potatoes will taste delightful even without the mix, but if you like things spicy, you may really appreciate this added touch.
