For the dough:
 3 ½ cups flour
 1 cup room temperature water
 ½ cup milk, any percentage will do
 5 tbsp sugar
 2 ¼ tsp instant yeast (NOT active dry)
 1 ¼ tsp salt
 2 tbsp unsalted butter, room temperature
For the butter block:
 1 ¼ cups unsalted butter, room temperature
For the pain au chocolat
 good quality chocolate, cut into sticks or chunks
 Demerara sugar, for sprinkling
 1 egg mixed with 1-2 TBSP water, for egg wash
