The suggested serving size in this recipe is 1 toast per person. Avocado toast is delicious and healthy, however, it's not low in calories. An average avocado is around 320 calories while each slice of bread is around 120 calories. Having said that, I'm often guilty of eating both of these delicious avocado toasts myself!
Mash avocado in the bowl to your desired consistency with a healthy pinch of kosher salt. Some prefer this mash to be perfectly smooth and creamy. Personally, I like mine chunky.
Toast the bread really well (be sure not to burn it.) Well toasted bread not only provides good support for all your toppings of choice, it also creates a perfect contrast between crisp bread and creamy avocado.
Spread you avocado mash on top of the toast, drizzle with some olive oil, if using, and season with coarse salt and freshly ground black pepper. Enjoy.
If using white onions, soak them for 10 minutes in cold water. Then drain before adding to the toast. This will help them retain plenty of crunch, but take away their unpleasant pungency.
Use any of the suggested variations to top the avocado toast we made in step 3. Simple jalapenos and onions are always a nice addition. Jalapenos, onions, tomato and cilantro is my favourite vegetarian variation. Radishes provide an exceptional textural contrast.
