  • 1 medium ripe banana
  • 2 large eggs
  • 2 tbsp (25g) sugar
  • 1 tsp vanilla extract
  • 3 tbsp (45g) melted and cooled unsalted butter
  • 1/2 tsp kosher salt
  • 1 cup plus 2 tbsp (270 ml) milk
  • 1 1/2 cups (190g) flour
  • 1 tbsp baking powder

Instructions

    Mash the banana in a large bowl. Whisk in the milk, sugar, kosher salt, cooled melted butter, and vanilla. Add the eggs and whisk gently.

    Combine the flour and baking powder. Sift it into the pancake batter. Whisk or, ideally, fold everything together until you have a homogenous mixture—some lumps are okay. Be sure not to overmix.

    Using a 1/4 cup (60ml) measure for each pancake, fry over medium heat in butter until cooked through and golden on both sides. Serve with butter, banana slices, and maple syrup.
