Heat a heavy-bottom skillet (ideally cast iron) over medium heat for at least 3-4 minutes, until very hot. Lightly grease the skillet with oil or butter.
In the meantime, wash, dry and halve your peaches. Remove the pit.
Place the peaches cut side down and cook for about 5 minutes, until caramelized. Lower the heat if needed to avoid burning your peaches. Flip the peaches and continue cooking the other side for 4 minutes or so, until the peach is cooked to your liking (I like mine tender on outside but with some bite in the middle.)
You can serve these warm, at room temperature or even straight from the fridge. Divide the peaches and Greek yogurt between two plates, sprinkle with some cinnamon, top with any additional garnishes of choice and serve!
