Ingredients
1.5 TBSP pumpkin puree
1/2 tsp pumpkin spice (recipe in the notes), plus more for sprinkling on top
freshly ground black pepper
1 TBSP white sugar
1 cup milk
pinch of salt
2 tsp vanilla extract (yes! that much!)
1/4 cup - 1/3 cup espresso, freshly brewed
whipped cream, for serving (about 2-3 TBSP per drink)
Directions
- Heat pumpkin puree with pumpkin spice and pepper in a medium pot over medium heat. Cook for about 2 minutes until darker in colour and fragrant. Add sugar and cook for another minute or so until syrupy. Add milk and cook (without letting it come to a boil) until heated through. Stir in vanilla and a pinch of salt. Blend with a hand-held blender or regular blender until smooth and frothy.
- Add frothed milk to a cup. Pour espresso over it. Top with whipped cream and sprinkle with more pumpkin spice.
Notes
- To make pumpkin spice, simply combine 1 TBSP cinnamon, 2 tsp ground ginger, 1/2 tsp allspice, 1/2 tsp ground cloves and 1/2 tsp nutmeg. Store the rest in an airtight container as you will only need a little bit for your drink.
- To make whipped cream, whip 1 cup heavy cream with 1 TBSP sugar and a pinch of salt until medium or medium-stiff peaks.
