As my prior post mentioned, I’m obsessed with quick 15 minute weeknight dinners. And this delicious meal happens to do just that!
Beef and Broccoli Stir Fry

8 oz dried noodles (udon, ramen, soba or even spaghetti)
1 TBSP oil
1 lb ground beef
1 onion, chopped
1/2 tsp kosher salt and freshly ground black pepper
1 head of broccoli, cut into florets
1/2 cup chicken stock
1/3 cup peanuts, for garnish
4 green onions, thinly sliced, for garnish
- For the sauce:
3/4 cup chicken stock
1 TBSP corn starch
5 garlic cloves, pressed
1 inch of fresh ginger, grated
1/4 cup soy sauce
1.5 TBSP honey
3 TBSP Oyster sauce
1/2 tsp Sambal Oelek, or more to taste
Directions
- Heat oil in a large pan. Add onion and ground beef and cook on medium heat for about 6 minutes, until the beef is cooked through and the onion is tender. Season with salt and pepper.
- In the meantime, cook the noodles about 1.5 minutes less than the package instructions to al dente.
- Add broccoli florets, chicken stock, cover and cook covered for 2-3 minutes, until the broccoli is a bit tender and bright green.
- Whisk all the sauce ingredients together.
- Pour the sauce over the beef and stir in the noodles. Cook, stirring, for about 2 minutes until the sauce is thickened and the noodles are cooked through. Garnish with peanuts and green onions.
