Spring Roll Kimchi Bowl

Delicious. And meets my new standard for a weeknight meal – which is the cook time of appox 15 minutes!

Ingredients

  • 1 TBSP oil

  • 1 lb ground pork

  • 1 onion, chopped

  • 1/2 tsp kosher salt

  • freshly ground black pepper

  • 1 inch of fresh ginger, grated

  • 5 garlic cloves, pressed

  • 1 14oz bag of coleslaw mix

  • 2 TBSP soy sauce

  • 1/2 tsp Sambal Oelek, or more to taste

  • 1/2 cup Kimchi, or more to taste

  • 1 tsp sesame oil

  • 1 tsp rice vinegar (I often use the juice of freshly squeezed lime instead)

  • 4 green onions, thinly sliced

Directions

  • Heat oil in a large pan. Add onions and pork and cook, breaking up the meat, for about 6-7 minutes until cooked through.
  • Add ginger and cook for a minute or so. Add the coleslaw mix, soy sauce and Sambal Oelek. Cook for 2-3 minutes while stirring until still crisp but tender, then remove from heat. Stir in sesame oil, rice vinegar and kimchi. Garnish with green onions before serving.
