Stewed Cabbage
Ingredients
1/4 cup unsalted butter
1 onion, chopped
1 celery stalks, chopped
2 garlic cloves, minced
1 head of cabbage, chopped into 1 inch squares
1 14 oz can of diced fire roasted tomatoes
2 bay leaves
salt and pepper to taste
Directions
- Melt butter in a large saucepot (sometimes I use two skillets for step 1 before combining everything into one pot if there's too much cabbage.) Over medium heat, saute onions, celery and garlic for 4-5 minutes until softened and translucent, but not browned. Add cabbage and saute on low for about 10-15 minutes, until softened and reduced in size.
- Add tomatoes, bay leaves, season with salt and pepper, stir well, cover it and cook for about 40-50 minutes until flavourful and tender. Remove bay leaves before serving.
