Grilled Zucchini

I don’t even know if you can call this a recipe. But it’s a very quick side dish that everyone seems to enjoy. I like not overcooking my grilled zucchini so that they still have a bit of a bite to them.

Zesty Green Bean Salad

Absolutely delicious way to make green beans. In this recipe, I’m only describing green beans, but the list of options of what else can be added is limitless – almonds, feta, tomatoes, sundried tomatoes, etc. Delicious!

Ratatouille

There are many ways to make Ratatouille. I believe this way of roasting the eggplants and zucchini in the oven is much easier than cooking the whole dish on the stovetop. I enjoy serving this over toast with a sunny side egg on top.
