FAQ

Can you make Grandpa Rob's pancake batter ahead of time?+
Yes, you can prepare the dry ingredients the night before and store them in an airtight container, then mix everything together fresh in the morning for fluffier pancakes. However, avoid mixing the wet and dry ingredients together until you're ready to cook, as the baking soda and baking powder will lose their lift.
What can I use if I don't have buttermilk for this recipe?+
You can make a substitute by mixing 2 cups of regular milk with 2 tablespoons of lemon juice or white vinegar and letting it sit for 5 minutes until it curdles. This will give you the same tangy flavor and texture that makes these pancakes so fluffy.
Why are my pancakes coming out dense instead of fluffy?+
The most common mistake is overmixing the batter after combining the wet and dry ingredients—just whisk until the ingredients are barely combined and some lumps remain. Also make sure your baking powder and baking soda aren't expired, and don't let the batter sit too long before cooking.
How should I serve Grandpa Rob's pancakes?+
Serve them warm off the griddle with your favorite toppings like maple syrup, butter, fresh berries, whipped cream, or chocolate chips. You can also make a big batch and freeze the cooled pancakes for up to 2 months—just reheat them in the toaster for a quick breakfast.
