Ingredients

  • 2 English cucumbers, halved lengthwise, seeded and sliced into 1/4-inch slices

  • 1/2 red onion, thinly sliced

  • 1/2 cup cilantro, chopped

  • 1/3 cup salted roasted peanuts

  • 1 Thai chili or jalapeno, sliced

  • For the Dressing:
  • 1/4 cup fresh lime juice

  • 1 1/2 TBSP sugar

  • 1 1/2 TBSP fish sauce

  • 1 tsp honey

  • 2 TBSP vegetable oil

  • 1 garlic clove, pressed

  • 1/2 tsp Sambal Oelek, or more to taste

Directions

  • Place cucumbers, onions, cilantro, peanuts and jalapeno/chiles in a bowl. Combine all the dressing ingredients and pour over the cucumbers. Toss to combine. Serve right away and enjoy!
