2 English cucumbers, halved lengthwise, seeded and sliced into 1/4-inch slices
1/2 red onion, thinly sliced
1/2 cup cilantro, chopped
1/3 cup salted roasted peanuts
1 Thai chili or jalapeno, sliced
- For the Dressing:
1/4 cup fresh lime juice
1 1/2 TBSP sugar
1 1/2 TBSP fish sauce
1 tsp honey
2 TBSP vegetable oil
1 garlic clove, pressed
1/2 tsp Sambal Oelek, or more to taste
Directions
- Place cucumbers, onions, cilantro, peanuts and jalapeno/chiles in a bowl. Combine all the dressing ingredients and pour over the cucumbers. Toss to combine. Serve right away and enjoy!
