“Rustic Retreat” Salad

My husband’s favourite salad. Combines the freshest greens with apples, smoked Gouda, candied pecans in a flavourful Maple Dijon Vinaigrette.

This is inspired by Pineridge Hollow Salad – a salad from a local restaurant.

Maple Dijon Vinaigrette Salad

Ingredients

  • For the Vinaigrette:
  • 2 TBSP maple syrup

  • 1 TBSP Dijon mustard

  • 2 TBSP red wine vinegar

  • 1 shallot, minced

  • 1/2 tsp kosher salt

  • 1/4 tsp black pepper

  • 1/6 cup olive oil

  • 1/6 cup neutral oil such as sunflower

  • For the salad:
  • 10 cups greens (green leaf lettuce, mesclun greens, etc.)

  • 2-3 apples such as Gala, Fuji, chopped

  • 1 cup shredded smoked Gouda cheese

  • 1 cup candied pecans, recipe can be found here

Directions

  • For the salad dressing, combine all ingredients in a tightly sealed jar and shake until emulsified.
  • Dress the greens with the dressing. Top with apples, candied pecans and cheese. Season with freshly ground black pepper and serve.
