My husband’s favourite salad. Combines the freshest greens with apples, smoked Gouda, candied pecans in a flavourful Maple Dijon Vinaigrette.
This is inspired by Pineridge Hollow Salad – a salad from a local restaurant.
Maple Dijon Vinaigrette Salad

- For the Vinaigrette:
2 TBSP maple syrup
1 TBSP Dijon mustard
2 TBSP red wine vinegar
1 shallot, minced
1/2 tsp kosher salt
1/4 tsp black pepper
1/6 cup olive oil
1/6 cup neutral oil such as sunflower
- For the salad:
10 cups greens (green leaf lettuce, mesclun greens, etc.)
2-3 apples such as Gala, Fuji, chopped
1 cup shredded smoked Gouda cheese
Directions
- For the salad dressing, combine all ingredients in a tightly sealed jar and shake until emulsified.
- Dress the greens with the dressing. Top with apples, candied pecans and cheese. Season with freshly ground black pepper and serve.
