Ingredients

  • 2 lbs green beans, trimmed

  • 2 TBSP lemon juice, up to 3 TBSP

  • 1/4 cup olive oil

  • 1.5 TBSP Dijon mustard

  • 1 garlic clove, pressed

  • Salt and pepper to taste

Directions

  • Add beans to boiling salted water and boil 5-7 minutes (depending on thickness of the beans) until done to your liking and are tender but still crisp.
  • Immediately drain the beans and place in an ice bath to stop the cooking process.
  • Whisk olive oil, lemon juice, Dijon, garlic clove and salt and pepper in a large bowl. Add the drained beans and toss to combine. Refrigerate for at least an hour before serving for the flavours to meld.
