2 lbs green beans, trimmed
2 TBSP lemon juice, up to 3 TBSP
1/4 cup olive oil
1.5 TBSP Dijon mustard
1 garlic clove, pressed
Salt and pepper to taste
Directions
- Add beans to boiling salted water and boil 5-7 minutes (depending on thickness of the beans) until done to your liking and are tender but still crisp.
- Immediately drain the beans and place in an ice bath to stop the cooking process.
- Whisk olive oil, lemon juice, Dijon, garlic clove and salt and pepper in a large bowl. Add the drained beans and toss to combine. Refrigerate for at least an hour before serving for the flavours to meld.
