Arugula Salad with Honey Basil Vinaigrette

What a beautiful dressing! Made with fresh basil. This salad is inspired by Stella’s Arugula Salad – a salad from a local restaurant chain. So delicious and vibrant!

Ingredients

  • For Honey Basil Vinaigrette:
  • 1/2 cup fresh basil

  • 3 TBSP honey

  • 3 TBSP red wine vinegar

  • 1 TBSP Dijon mustard

  • 1/2 tsp ground pepper

  • salt, to taste

  • 1/4 cup olive oil

  • For the Salad:
  • 6 cups arugula

  • 1 bunch green onions, chopped

  • 1 bunch radishes, sliced

  • 1 cup sugar snap peas, chopped

  • 1/3 cup snow peas, chopped

  • 1/3 cup crumbled feta

Directions

  • Pulse all of the salad dressing in the blender until blended and emulsified. Use immediately or refrigerate until the salad is ready to serve.
  • Combine all of the vegetables in a large bowl, pour the prepared dressing on top. Crumble feta cheese over the salad.
