What a beautiful dressing! Made with fresh basil. This salad is inspired by Stella’s Arugula Salad – a salad from a local restaurant chain. So delicious and vibrant!

Ingredients
- For Honey Basil Vinaigrette:
1/2 cup fresh basil
3 TBSP honey
3 TBSP red wine vinegar
1 TBSP Dijon mustard
1/2 tsp ground pepper
salt, to taste
1/4 cup olive oil
- For the Salad:
6 cups arugula
1 bunch green onions, chopped
1 bunch radishes, sliced
1 cup sugar snap peas, chopped
1/3 cup snow peas, chopped
1/3 cup crumbled feta
Directions
- Pulse all of the salad dressing in the blender until blended and emulsified. Use immediately or refrigerate until the salad is ready to serve.
- Combine all of the vegetables in a large bowl, pour the prepared dressing on top. Crumble feta cheese over the salad.
