Ingredients
8 slices of good multigrain bread, toasted
2 medium avocados
1 TBSP lemon or lime juice
2 large tomatoes, sliced
1/2 tsp kosher salt and freshly ground black pepper
1/2 cup hummus
8 slices good cheese, such as Provolone, Havarti or Swiss
1 cup alfalfa sprouts
2/3 cup shredded carrots
1/2 English cucumber, sliced thinly
Directions
- Mash avocado with a fork. Add lemon juice, kosher salt and pepper.
- Spread hummus over 4 toasted bread slices. Top each toast with 2 slices of cheese. Top with sprouts, tomatoes, cucumbers and carrots.
- Spread avocado mash over the remaining 4 bread slices. Close your sandwich by placing these toasts on top of the toasts prepared in step 2. Cut each sandwich in half with a serrated knife. Serve right away and enjoy!
