Wow. What a delicious and healthy sandwich. Will definitely be adding this easy to make meal to our dinner rotation!

Ingredients

  • 8 slices of good multigrain bread, toasted

  • 2 medium avocados

  • 1 TBSP lemon or lime juice

  • 2 large tomatoes, sliced

  • 1/2 tsp kosher salt and freshly ground black pepper

  • 1/2 cup hummus

  • 8 slices good cheese, such as Provolone, Havarti or Swiss

  • 1 cup alfalfa sprouts

  • 2/3 cup shredded carrots

  • 1/2 English cucumber, sliced thinly

Directions

  • Mash avocado with a fork. Add lemon juice, kosher salt and pepper.
  • Spread hummus over 4 toasted bread slices. Top each toast with 2 slices of cheese. Top with sprouts, tomatoes, cucumbers and carrots.
  • Spread avocado mash over the remaining 4 bread slices. Close your sandwich by placing these toasts on top of the toasts prepared in step 2. Cut each sandwich in half with a serrated knife. Serve right away and enjoy!
