Ingredients

  • 3 TBSP butter, divided

  • 8 oz mushrooms, sliced

  • 1 onion, chopped

  • 1 lb ground beef

  • 3/4 tsp kosher salt

  • 1/4 tsp ground pepper

  • 3 TBSP flour

  • 2 garlic cloves pressed

  • 3 1/2 cups beef or chicken broth

  • 1 TBSP Dijon mustard

  • 2 tsp Worcestershire sauce

  • 1 TBSP soy sauce

  • 8 oz dried egg noodles

  • 1/2 cup sour cream

  • 1/2 cup chopped pickles

  • 1 TBSP Italian parsley, chopped

Directions

  • Over medium-high heat, melt 1 TBSP butter and cook mushrooms with a pinch of salt and pepper until well-browned, 5-7 minutes. Remove to a plate and set aside.
  • Melt the remaining 2 TBSP butter and cook onion and ground beef for 5-7 minutes until browned. Keep breaking the meat into small pieces as you cook it. Season with salt and pepper. Add flour and cook for 1-2 minutes to cook off the raw taste. Add the broth and stir well. Bring to a simmer. Stir in Dijon, Worcestershire, soy sauce, and noodles. Cook, uncovered for about 6-8 minutes until the noodles are cooked, stirring occasionally. 
  • Stir in pickles, and sour cream, garnish with parsley and serve.
