Ground Beef Stroganoff

3 TBSP butter, divided
8 oz mushrooms, sliced
1 onion, chopped
1 lb ground beef
3/4 tsp kosher salt
1/4 tsp ground pepper
3 TBSP flour
2 garlic cloves pressed
3 1/2 cups beef or chicken broth
1 TBSP Dijon mustard
2 tsp Worcestershire sauce
1 TBSP soy sauce
8 oz dried egg noodles
1/2 cup sour cream
1/2 cup chopped pickles
1 TBSP Italian parsley, chopped
Directions
- Over medium-high heat, melt 1 TBSP butter and cook mushrooms with a pinch of salt and pepper until well-browned, 5-7 minutes. Remove to a plate and set aside.
- Melt the remaining 2 TBSP butter and cook onion and ground beef for 5-7 minutes until browned. Keep breaking the meat into small pieces as you cook it. Season with salt and pepper. Add flour and cook for 1-2 minutes to cook off the raw taste. Add the broth and stir well. Bring to a simmer. Stir in Dijon, Worcestershire, soy sauce, and noodles. Cook, uncovered for about 6-8 minutes until the noodles are cooked, stirring occasionally.
- Stir in pickles, and sour cream, garnish with parsley and serve.
