Ingredients

  • 1 medium onion, chopped

  • 1 celery stalk, chopped

  • 1 carrot, peeled and chopped

  • 3 garlic cloves, pressed

  • 2 TBSP olive oil

  • 3 TBSP flour

  • 2 tsp Italian seasoning

  • salt and pepper, to taste

  • 1/2 tsp sugar

  • 4 cups chicken stock

  • 28 oz can crushed tomatoes

  • 1/2 cup grated Parmesan cheese

  • small package refrigerated cheese tortellini (about 9-10 oz)

  • 1/2 cup coffee cream

  • small package of baby spinach (about 5oz)

Directions

  • Heat oil in a large pot. Add onions, carrots and celery and cook, stirring occasionally, until softened, about 5 minutes. Add flour and cook for a minute or two to cook off the raw taste. Add garlic and cook for about 30 seconds until fragrant. Add chicken stock slowly, while stirring. Add tomatoes, Italian seasoning, sugar, salt and pepper to taste. Bring to boil, reduce to simmer and simmer for about 15-20 minutes.
  • Add tortellini and cook for a minute less than package instructions. Add cheese, cream and spinach and cook for a minute or so until the spinach is wilted. Remove from heat. Taste and adjust seasoning to taste.
