Guacamole Salad

1 pint grape tomatoes, halved
1 yellow or orange bell pepper, chopped
1/2 red onion, diced
1/2 jalapeno, small dice
2 avocados, diced or sliced
1 15-oz can black beans, drained and rinsed
- For the dressing:
zest of 2 limes
1/3 cup lime juice
1/4 cup olive oil
1 tsp kosher salt
1/2 tsp black pepper
2 garlic cloves, pressed
Directions
- Mix all of the dressing ingredients together in a small bowl.
- Mix all of the salad ingredients together in a large bowl. Please note, if avocadoes are not added, this salad stores great in the fridge for 2 days. As such, I don't mix the avocadoes in right away and add them to the individual plates when the salad is being served. Pour the dressing over the ingredients, toss well and serve.
