Guacamole Salad

Ingredients

  • 1 pint grape tomatoes, halved

  • 1 yellow or orange bell pepper, chopped

  • 1/2 red onion, diced

  • 1/2 jalapeno, small dice

  • 2 avocados, diced or sliced

  • 1 15-oz can black beans, drained and rinsed

  • For the dressing:
  • zest of 2 limes

  • 1/3 cup lime juice

  • 1/4 cup olive oil

  • 1 tsp kosher salt

  • 1/2 tsp black pepper

  • 2 garlic cloves, pressed

Directions

  • Mix all of the dressing ingredients together in a small bowl.
  • Mix all of the salad ingredients together in a large bowl. Please note, if avocadoes are not added, this salad stores great in the fridge for 2 days. As such, I don’t mix the avocadoes in right away and add them to the individual plates when the salad is being served. Pour the dressing over the ingredients, toss well and serve.
