- For the Salad:
2 medium bell peppers (any color, chopped)
3 celery stalks (chopped)
1 English cucumber (seeded and sliced)
½ red onion (sliced)
1pint cherry tomatoes (halved)
1 can chickpeas (drained)
1 tsp dried basil
salt
pepper
5 oz feta (cubed)
- For the Dressing
3 tbsp red wine vinegar
1 tbsp Dijon mustard
2 cloves garlic (minced or pressed)
1 tbsp dried oregano
1/2 tsp kosher salt
1/4 tsp black pepper
1/3 cup olive oil
Directions
- Make the dressing. Mix the top six dressing ingredients well, and slowly pour the olive oil while whisking and emulsifying the dressing.
- Combine all your vegetables.
- Sprinkle with some basil, salt, and pepper.
- Pour the dressing over the vegetables. This salad can be served immediately or sit in the fridge for a couple of hours so the flavors can meld.
- Taste and season with more salt and pepper as needed.
