2 lbs Russet or yellow potatoes
3 tbsp olive oil
3 garlic cloves (minced)
1 tsp salt
1/2 tsp pepper
2 tbsp fresh rosemary
- For the Garnish:
2 tbsp parsley (optional)
Directions
- Preheat oven to 425 degrees Fahrenheit.
- Add garlic to the olive oil and mix well. Let it sit in a bowl while you are prepping the rest of the ingredients.
- Peel potatoes. Chop into large chunks. I mean it! 1.5-2 inches chunks. Make them as uniform as possible. Anything smaller, your potatoes won’t achieve the perfect crisp outside while being perfectly tender on the inside. Place the potatoes into a large ziplock bag or a bowl.
- Strain the olive oil into your potatoes, reserving garlic for another use. This way, you get all the flavor and no burnt garlic taste!
- Add rosemary and salt to the potatoes. Toss well.
- Lay potatoes onto a baking sheet and place in the oven.
- Flip every 15 minutes or so to ensure even browning.
- Once potatoes are tender and browned on the outside (total baking time of 45-60 minutes), they are done. Garnish with parsley, and enjoy!
