Ingredients

  • 2 lbs Russet or yellow potatoes

  • 3 tbsp olive oil

  • 3 garlic cloves (minced)

  • 1 tsp salt

  • 1/2 tsp pepper

  • 2 tbsp fresh rosemary

  • For the Garnish:
  • 2 tbsp parsley (optional)

Directions

  • Preheat oven to 425 degrees Fahrenheit.
  • Add garlic to the olive oil and mix well. Let it sit in a bowl while you are prepping the rest of the ingredients.
  • Peel potatoes. Chop into large chunks. I mean it! 1.5-2 inches chunks. Make them as uniform as possible. Anything smaller, your potatoes won’t achieve the perfect crisp outside while being perfectly tender on the inside. Place the potatoes into a large ziplock bag or a bowl.
  • Strain the olive oil into your potatoes, reserving garlic for another use. This way, you get all the flavor and no burnt garlic taste!
  • Add rosemary and salt to the potatoes. Toss well. 
  • Lay potatoes onto a baking sheet and place in the oven.
  • Flip every 15 minutes or so to ensure even browning.
  • Once potatoes are tender and browned on the outside (total baking time of 45-60 minutes), they are done. Garnish with parsley, and enjoy!
