Tender Pork Ribs

Ingredients

  • 3 lbs pork ribs

  • 1/2 tsp red pepper flakes

  • kosher salt

  • 2 bay leaves

  • 1 TBSP olive oil

  • 1 onion, chopped

  • bottle of your favourite barbeque sauce

Directions

  • Slice pork ribs into individual ribs. Place in a pot with red pepper flakes, kosher salt and bay leaves. Add enough water to just cover the ribs. Bring to a boil. Cover, reduce to simmer and simmer very gently for 1.5 hours. Check to make sure your ribs are perfectly tender and drain.
  • Cook onions in a TBSP of olive oil until softened.
  • Smother the ribs with barbeque sauce. Place in a 9x13 baking dish. Spoon onions on top. Cover with aluminum foil and bake at 350F for about 10 minutes or so, until heated through. You can also broil the ribs for a minute or two for better colour and texture.
