Tender Pork Ribs

Ingredients

  • 3 lbs pork ribs

  • 1/2 tsp red pepper flakes

  • kosher salt

  • 2 bay leaves

  • 1 TBSP olive oil

  • 1 onion, chopped

  • bottle of your favourite barbeque sauce

Directions

  • Slice pork ribs into individual ribs. Place in a pot with red pepper flakes, kosher salt and bay leaves. Add enough water to just cover the ribs. Bring to a boil. Cover, reduce to simmer and simmer very gently for 1.5 hours. Check to make sure your ribs are perfectly tender and drain.
  • Cook onions in a TBSP of olive oil until softened.
  • Smother the ribs with barbeque sauce. Place in a 9×13 baking dish. Spoon onions on top. Cover with aluminum foil and bake at 350F for about 10 minutes or so, until heated through. You can also broil the ribs for a minute or two for better colour and texture.
