Zucchini Bread

It’s pretty self-explanatory! But did I mention it’s made in one-bowl? Quick, easy, one bowl preparation! And as with all my breads and muffins, I try to stay away from highly refined white flour! If it’s enjoyed as a snack, I try to make it as healthy and as wholesome as possible! So this bread uses 100% whole wheat, and guess what, no one will ever know! It’s healthy, moist and delicious.

Zucchini make these brownies extremely soft, moist with a velvety decadent crumb. So quick and easy to make and such a crowd pleaser! If you bring these to a party, you are most definitely getting invited back!

No buttermilk? No problem. Put 1 TBSP of white vinegar or fresh lemon juice in your cup measure. Fill the rest with milk, to equal 2/3 cup as called for in the recipe. Allow it to sit at room temperature for 10 minutes to thicken and turn into “homemade buttermilk.”

Depending on how generous you are with your portioning, this mousse will make 6-8 servings.

This mousse is designed for semi-sweet chocolate; if you wish to use dark chocolate – the amount of sugar will need to be increased.

Apple Muffins

1. Preheat the oven to 425. Grease lightly or line your muffin tins with paper muffin liners.

2. Whisk olive oil and sugar until thickened. Add Greek yogurt, milk, vanilla, egg, baking powder, baking soda, salt and cinnamon. Whisk until well combined.

3. Add the flour all at once folding gently to combine with a rubber spatula. When the flour is about 75% folded, add the apples and finish folding until everything is evenly combined. Do not overmix. Divide the batter between 12 muffin cups. Sprinkle a little bit of Turbinado sugar on top of each muffin.
