Economical, easy and quick to make and so delicious! I would say this is my most Go-To recipe of all time. Having made hundreds of recipes, I still struggle to think of what’s for dinner! But this never fails. It’s always available at the store and it virtually cooks itself. And although I make it weekly, no one ever gets tired of juicy chicken with the crispiest skin!

Ingredients

  • 2 lbs skin-on, bone-in chicken thighs

  • 1 TBSP olive oil

  • kosher salt, to taste

  • freshly ground black pepper to taste

  • 1/2 tsp paprika, or more to taste

  • 1/4 tsp garlic powder

Directions

  • Preheat oven to 475F. Line a baking sheet with aluminum foil. If desired, set a wire rack on top (or bake directly on the sheet.)
  • Pat chicken thighs dry with paper towels. Brush with olive oil. Sprinkle liberally with salt, pepper, garlic powder and paprika. Transfer to the prepared baking sheet skin side up.
  • Roast in preheated oven for 20 minutes. Reduce the temperature to 400 and continue roasting for another 25-30 minutes until cooked through and the skin is crips. If needed, you may also broil these for a couple of minutes.
