Greek Salad Dressing

I’ve been working on a Greek salad dressing for quite some time. Adding honey to the dressing and making it very gently sweet is a game changer!!

Ingredients

  • 4 garlic cloves, pressed

  • 2 tsp Dijon mustard

  • 1 TBSP lemon juice

  • 3 TBSP red wine vinegar

  • 2-3 tsp honey

  • 1/2 tsp kosher salt

  • 1/2 tsp freshly ground black pepper

  • 1 TBSP dried oregano

  • 1/2 tsp dried basil

  • 1 tsp lemon zest

  • 1/3 cup olive oil

  • 1/3 cup vegetable oil

Directions

  • Place all ingredients in a tightly sealed container and shake until completely combined, emulsified and thick.
  • Pour over your Greek salad ingredients such as cucumbers, tomatoes, onions, olives. I also like adding Romaine lettuce. Toss well and serve garnished with feta.
