What a lovely flavourful easy to make dish!
Greek Lemon Chicken
1/2 cup lemon juice
1/4 cup olive oil
6 garlic cloves, pressed
1 TBSP dried oregano
1 tsp Italian seasoning
1 tsp freshly ground black pepper
2 tsp kosher salt
4 lbs skin-on, bone-in chicken thighs
- Combine lemon juice, olive oil, garlic, oregano, Italian seasoning, salt and pepper in a large resealable bag. Add chicken and toss to coat. Marinate refrigerated to at least 4 hours or overnight.
- Preheat oven to 425F.
- Remove the chicken pieces, dry them with the paper towels and place on top of aluminum foil lined baking sheet. Bake in preheated oven for 30-40 minutes until cooked through. I recommend cooking to 180F internal temperature – at this temperature the connective tissue found in a thigh breaks down nicely to make your chicken tender yet juicy.
- Broil the chicken on high for about 3 minutes until nice golden brown. Serve with lemon wedges and enjoy!
