Ingredients

  • 1/2 cup lemon juice

  • 1/4 cup olive oil

  • 6 garlic cloves, pressed

  • 1 TBSP dried oregano

  • 1 tsp Italian seasoning

  • 1 tsp freshly ground black pepper

  • 2 tsp kosher salt

  • 4 lbs skin-on, bone-in chicken thighs

Directions

  • Combine lemon juice, olive oil, garlic, oregano, Italian seasoning, salt and pepper in a large resealable bag. Add chicken and toss to coat. Marinate refrigerated to at least 4 hours or overnight.
  • Preheat oven to 425F.
  • Remove the chicken pieces, dry them with the paper towels and place on top of aluminum foil lined baking sheet. Bake in preheated oven for 30-40 minutes until cooked through. I recommend cooking to 180F internal temperature – at this temperature the connective tissue found in a thigh breaks down nicely to make your chicken tender yet juicy.
  • Broil the chicken on high for about 3 minutes until nice golden brown. Serve with lemon wedges and enjoy!
