Grilled Zucchini

I don’t even know if you can call this a recipe. But it’s a very quick side dish that everyone seems to enjoy. I like not overcooking my grilled zucchini so that they still have a bit of a bite to them.

Ingredients

  • Zucchini, quartered lengthwise

  • Salt and Pepper

  • Olive oil

  • Italian seasoning

  • Garlic powder, optional

  • Freshly squeezed lemon juice

  • Fresh garlic, to taste, chopped

Directions

  • Preheat the grill to medium. Brush cut zucchini with oil. Season with salt, pepper, Italian seasoning and garlic powder.
  • Grill for about 10 minutes total: about 3 minutes per side. It’s important to not overcook this so that zucchini still maintains it’s shape and has some bite to it. I find about 9 minutes perfect, and never go over 10-11 minutes.
  • Squeeze fresh lemon juice over zucchini. Serve with fresh chopped garlic.
