Spaghetti Squash

1 spaghetti squash, halved lengthwise and seeds removed
2 TBSP olive oil
1 onion, chopped
2 medium tomatoes, chopped
2 medium bell peppers, chopped
2 garlic cloves, pressed
1/2 cup sliced black olives
1/2 – 3/4 cup cubed feta
salt and pepper to taste
fresh herbs for serving
Directions
- Preheat the oven to 400F. Lightly grease the baking sheet with oil. Place the squash cut side down on the prepared baking sheet. Bake in preheated oven for 30-40 mins until a knife could be inserted with little resistance. Remove from the oven and set aside to cool slightly.
- In the meantime, heat oil in a large pan over medium heat. Add onion and cook for 3-4 minutes until tender. Add tomatoes and bell peppers and cook for 5-7 minutes until softened. Add garlic and cook for 30 seconds or so. Remove from heat.
- Scoop out the spaghetti like pulk from the squash and add to the tomato pepper mixture. Add feta, lives, fresh hers, if using, and toss to combine. Season with salt and pepper. Serve and enjoy!
