Just realized this recipe wasn’t posted! Had to immediately find the written version and type it up! This is a great potato dish. Not light on calories but is sooo worth it as an occasional side dish!
Loaded Potato Casserole
2 1/2 lbs Russet potatoes, peeled
6 TBSP unsalted butter
1/2 cup milk
1/2 cup sour cream
3/4 tsp salt
8 oz Cheddar cheese, shredded, plus more for topping
6 slices bacon, chopped
Green onions, sliced, for garnish
- Boil potatoes in a pot of lightly salted water until fork tender. Drain, mash and set aside.
- In the meantime, cook bacon in a heavy bottom skillet until browned. Set aside on a paper towel-lined plate.
- Heat butter and milk until hot. Add to the potatoes. Then add cheese, sour cream and season with salt. Fold gently until combined. Place into a lightly greases 9×9 casserole dish.
- Preheat oven to 375F. Sprinkle the potatoes with some additional shredded Cheddar cheese and cooked bacon. Bake in preheated oven, covered, for 25 minutes. Then uncover and bake for 10 more minutes. Garnish with green onions and serve.
