Candied Pecans

 1 cup pecan halves
 2 tbsp maple syrup
 1 tsp vanilla, optional
 2 tsp melted butter
 kosher salt or fleur de sel to taste (I like adding about 1/2 tsp)
 pinch of cayenne, optional, for some added heat
 pinch of cinnamon, classically added to candied pecans, I personally skip it

Preheat the oven to 325. Line a baking sheet with parchment paper.

Combine melted butter, maple syrup, cinnamon, cayenne and vanilla, if using. Add pecans and stir to coat. Spread the dressed pecans onto prepared baking sheet separating them and spreading them in a single layer. Sprinkle the pecans with salt.

Bake the nuts for 10 minutes at that point start checking them and stirring them every few minutes. They are done when they smell nutty and aromatic and have darkened in colour. We are looking at about 20-24 minutes. Remove them from the oven, make sure each nut is separated to avoid sticking and allow to cool. Be sure not to touch the nuts with your bare hands as the melted sugar will be very hot. The sugar will harden as it cools.

If you happen to have leftovers, which is unlikely, store them at room temperature in an airtight container. Enjoy!
